How To Know If Your Eggs Are Fresh
This fool-proof trick will provide the answer
Eggs are the best invention ever. They’re always in the fridge, they’re dead easy to cook and they’re packed with protein. The only downside – it can be hard to know if they’re past their use-by date.

The Fresh Egg Test
- Fill a bowl or glass with cold water and carefully place in the egg.
- If it sinks to the bottom and lays flat on its side, it’s very fresh.
- If it’s a few weeks old but still good to eat, it’ll sink to the bottom and stand on one end.
- If the egg floats, it’s most likely off. "If that happens it's not fresh at all. Do not eat it," warns Miguel.

The best way to store fresh eggs is in their original carton in the fridge.
Store eggs round side down in the carton. “This helps prevent moisture loss, but also stops eggs from absorbing other flavours in the fridge through their porous shells,” says Miguel.
Only clean, uncracked eggs should be stored. Dirty eggs are still okay to eat, but do use them immediately.
Avoid the temptation to wash eggs. This removes the outermost coating or ‘surface bloom’ which keeps out bacteria and dust, making it more susceptible to attack by microbes.
If you require room temperature eggs for cooking, take them out of the fridge up to an hour before use. This will allow for adequate warm-up time, says Miguel.
